Curried cous cous w/ vegetables and bacon
Such a delicious meal idea for breakfast, lunch or dinner. Rich in orange vegetables with are good sources of beta-carotene, vitamins A and C to name a few this meal is good for your eyes, immune system and helps reduce risk of cardiovascular disease and diabetes. Green leafy vegetables and the sulfur in onion and garlic support the liver in its detoxification process and provides fiber to support the health of the bowel. - Cous cous
- Curry powder
- Sweet potato
- 3 cloves of garlic
- Worcestershire sauce
- Preheat the oven to 175c
- Cut and peel the pumpkin, carrot and sweet potato into cubes. Place on a baking tray and drizzle with extra virgin olive oil. Cook for 20 - 30 min or until golden brown turning every 10 min to ensure the vegetables don't dry out.
- Dice the onion, garlic and bacon and brown in the frying pan. Slice the celery and kale. Add to the frying pan and cook until wilted. Add worcestershire sauce to taste.
- In a sauce pan, add one cup of cous cous to one cup of boiling powder. Add curry powder to taste and stir through the roast vegetables.
- Serve the cous cous on a plate with stir fry mix on top
