Roast Vegetables

Ingredients

  • Potato
  • Pumpkin
  • Sweet potato
  • Coconut oil

Method

  • Grease non stick baking tray with 1 tbsp coconut oil
  • Cube vegetables and place on the baking tray
  • Put tray into the oven at 175 degrees celsius. Turning vegetables every 10 min.
  • Cook for 30 min. or until golden brown. 

Salsa

Ingredients

  • 4 cups tomatoes, seeded and diced
  • 2 cucumbers, diced
  • 1/2 cup fresh corn kernels
  • small capsicum, diced
  • 1 small red onion, diced
  • 1 large avocado, diced
  • 1 lime
  • 1/4 cup coriander
  • 1/4 teaspoon paprika
  • Himalayan pink salt

Method

  • Place all ingredients in a large salad bowl and mix through without mashing the avocado

 

Serve vegetables on a plate and top with salsa. Or keep the salsa in a serving bowl to add ad lib. Garnish with fresh coriander and a wedge of lime.
