Pumpkin and cashew dip

  • Pumpkin
  • Cashews
  • Clove of garlic
  • Olive oil


  • Cut pumpkin into cubes and place in baking tray, drizzle with olive oil and put in the oven for 30 min. turning every 10 min. 
  • Put 2 handfuls of cashews into a food processor and a clove of garlic and process until you have a fine crumble
  • Put crumble and pumpkin into a bowl and mash until smooth 
  • Spread over rye crisp bread and enjoy
