Pumpkin and cashew dip
- Clove of garlic
- Olive oil
- Cut pumpkin into cubes and place in baking tray, drizzle with olive oil and put in the oven for 30 min. turning every 10 min.
- Put 2 handfuls of cashews into a food processor and a clove of garlic and process until you have a fine crumble
- Put crumble and pumpkin into a bowl and mash until smooth
- Spread over rye crisp bread and enjoy
