Roast vegetables and haloumi


  • Pumpkin
  • Sweet potato
  • Potato
  • Choco
  • Eggplant
  • Zucchini
  • Red Onion
  • Rosemary
  • Thyme
  • Coconut oil


  • Cut potato, sweet potato, pumpkin and choco into cubes, place in baking tray and sprinkle fresh thyme and rosemary over the top, add coconut oil
  • Place in the oven for 40 mins., and turn every 15 mins.
  • Cut eggplant, zucchini and red onion up and place in baking tray, with fresh herbs and coconut oil and put in the oven for 20 min. 
  • Fry haloumi on both sides until golden brown 3 - 5min. 
  • Serve and enjoy
