Roast vegetables and haloumi
- Sweet potato
- Red Onion
- Coconut oil
- Cut potato, sweet potato, pumpkin and choco into cubes, place in baking tray and sprinkle fresh thyme and rosemary over the top, add coconut oil
- Place in the oven for 40 mins., and turn every 15 mins.
- Cut eggplant, zucchini and red onion up and place in baking tray, with fresh herbs and coconut oil and put in the oven for 20 min.
- Fry haloumi on both sides until golden brown 3 - 5min.
- Serve and enjoy
